This meal makes two healthy servings and gives the feeling of a real treat, although it is totally protocol friendly. You can add hot sauce or more spice mix to the meat mixture if you like things a bit hotter/spicier.
Ingredients:
- 1 tsp olive oil
- 1 lb lean ground beef
- 1 tbsp spice mix (I blended my own spices to suit my taste)
- 1 tbsp low sodium soy sauce
- ½ tsp hot mustard
- 1/8 tsp flour
- ½ green pepper, chopped
- ½ lb sliced mushrooms
- ½ cauliflower
Directions:
Mix ground beef, spice mix and soy sauce together. Using a teaspoon, form into 24 meatballs. Heat non-stick pan with olive oil on medium heat and put in meatballs. Cover and cook for 7 minutes. Turn meatballs over and add peppers and mushrooms; cover and cook another 7 minutes.
While cooking meat and veggies, place grated/riced ½ cauliflower in microwave-safe bowl and cook on high for 4 minutes. Remove meatballs and veggies from pan; add hot mustard and flour and let sauce thicken. (Editor’s note: I mixed mustard and flour together and made a well in the centre of meatballs and veggies and added there).
Place cauliflower rice on plate, add meatballs and veggies (on side or on top) and half the sauce in the pan.
Editor’s note: I found it was easier to coat the meat and veggies as described above. There’s not really enough sauce to spoon over after you’ve plated the cauliflower rice and, meat and veggies.
