Key West Grilled Chicken

This tasty chicken recipe can be prepared and cooked as skewers or whole chicken breasts.
Compatible for all phases of Ideal Protein.  Yields 4 servings.

Ingredients:

  • 3 tbsp soy sauce
  • 2 tbsp Walden Farms Syrup or Truvia
  • 1 tbsp olive oil
  • Juice of one lime
  • 1 tsp minced garlic
  • 4 skinless, boneless chicken breasts

Directions:

In a small bowl, combine soy sauce, syrup or truvia, olive oil, lime juice and minced garlic.

If you prefer grilled chicken breasts, place chicken breasts into mixture and turn to coat.  Cover and marinate in fridge for at least 30 mins.  If you prefer kebabs, as pictured, cut chicken into large chunks and marinate as above.  When ready to cook, place chicken pieces on bamboo skewers that have been soaked in water for 5 mins.

For a slightly zestier version, add a teaspoon of freshly chopped cilantro to the marinade.

Grill on medium high heat for 6 – 8 mins on each side (or until juices run clear).  Serve with a fresh salad or steamed (or roasted) veggies.
