Irish Stuffed Peppers

Irish stuffed Peppers

Serves one person

7 oz lean ground beef
1 large green pepper, stem removed, and seeds hollowed out
1/4 cup leek, chopped fine
3/4 cup tomatoes, crushed
1/4 tsp cinnamon
1/4 tsp thyme
1/4 cup water
sea salt & pepper, to taste

Preheat oven to 375 degrees F

In a hot non-stick pan with grape seed oil, add ground beef and leeks; sauté until meat changes color but is not fully cooked. Now, add tomatoes, cinnamon and thyme; let cook for one minute and then, remove from heat.

Take whole pepper and remove the seeds and pits.Then, stuff the hollowed pepper with meat mixture; compact well and place on a baking sheet and set in the oven for 15 minutes or until beef is fully cooked.

Ready to serve!

Vanilla Crispy Squares

Yes … Vanilla Crispy Squares really are UNRESTRICTED!!  One square is one Ideal Protein serving – no matter when you decide to eat it.

Some people find the sweetness, right out of the package, a little too much.  I’ve discovered a new way to eat them and while I may be tricking my palate, it seems to take that extra edge off the sweetness.

Place your Vanilla Crispy Square upside down on a plate .. sprinkle the “top” (bottom) with cinnamon – as much or as little as you like.  Place the plate in the microwave and cook between 20 – 30 seconds.  Yummmmm!! Warm and soft!

Note:  the crispy bits may discolour slightly, but it doesn’t change the taste.  In my microwave, 25 seconds seems to do the trick.

 

Tangerine Water Enhancer

We all wonder how new products will taste and whether they are worth purchasing.

I liked the Mangosteen Water Enhancer, but I LOVE the freshness of the tangerine.  The instructions suggest you add it to 500 ml of water; however I find it still has a bit too much sweetness for me.  I make it up in a one litre jug and drink throughout the day.

I’ve also find it dissolves a little more quickly than the mangosteen.

Overall, I give it a rating of 4.5/5 stars!  I’ll be keeping it in stock – especially for vacation and summer.

My weight loss journey began on February 17, 2012.  My weight has ranged from normal to obese many times over the last forty years and I’ve tried it all – Nutri-System, WeighWatchers, Jenny Craig, Sure Slim and back to Weight Watchers – all with limited success.

In the past ten years, my weight really sky rocketed to the point where I gained an extremely unhealthy 60 pounds and I had a daily regimen of diuretics and high blood pressure pills, verging on diabetes medication.  People could hear my laboured breathing as I approached, sometime before they could actually see me.  Never mind the fact my knees were shot – I couldn’t exercise to lose weight and couldn’t lose weight because I couldn’t exercise.

Last year, before I started the Ideal Protein protocol, I was feeling very desperate – to the point of considering acupuncture, hypnosis or lapband surgery.  About the same time, a friend of mine told me about her new weight loss program – how she and her husband were enjoying the food and seeing amazing results.  You guessed it … Ideal Protein!  When she told me about her plan, I realized my “soon-to-be” local coach was my chiropractor’s partner!

I met with James Nero, D.C. and after discussing some of my past unsuccessful endeavours, my life style and the protocol, I made the decision to re-direct my spending and focus on my well-being!  My life style (or better yet, habits) was one where I would take-out, order in, eat out dinner 2 or 3 times per week.  That didn’t include the breakfast and lunches I ate out as well.

I was hooked when I lost 11 lbs the first week and was down by 28 lbs in six weeks.  Within three months, I was down by 48 lbs and by the end of June, I was down 59.5.  My total weight loss to date is 89 lbs.

Buying smaller clothes is an amazing benefit, yet the health rewards were (and continue to be) so much greater!  Within a month, I was no longer on my high blood pressure medication.  My blood pressure has now stabilized, I am breathing like a normal person, my lean body weight is now greater than my “fat mass” and my mobility has improved to the point where I can walk, take part in aquafit and get on the ground to play with my grandkids!

I still need to work through some of the emotions attached to eating issues, but my self-esteem has increased exponentially and it’s apparent to people who know me!  I’ve had to get used to hearing “you look so beautiful” and accepting that compliment with grace!  I am dancing into my “diamond jubilee”!!

My weight loss coach, Dr. Nero has helped me better understand how my body and my daily diet interact (how blood sugars are affected, how foods I eat are processed) and listened to my personal story to ensure he is able to offer the best personal coaching for me.  He’s quick to celebrate my successes and guide me through more challenging times, such as coping with vacation and Christmas while on protocol.  I am held accountable, in a gentle and accepting way – allowing me to reduce my own guilt but take positive action!

I encourage women and men who are overweight – no matter what your age – to explore Ideal Protein as “your last diet”.  I am so grateful for the Protocol , Lansdowne Chiropractic and my Coach, Dr. Nero!  I am learning how to eat, proper portions and what is healthy for me.

Most importantly, we all deserve It!!
